Valentine Whoopie Pies

I had two Valentine parties to go to with my girls today so I decided to bake up some chocolate chip whoopie pies this morning.  We had a fun Pinterest Valentine craft swap this morning and an outdoor Valentine party in the country this afternoon.  I knew I had all of the ingredients in my pantry and it saved me from carting all three girls to the store early this morning.  I like my whoopie pies fresh out of the oven so I baked them all this morning instead of baking them last night.  They also tend to stick together on the second day here in Central Florida.  They even stick on low humidity days.  I did luck out and get to bake them on a cool, crisp day today which always makes them have a fluffier consistency.

I have been baking a lot of cupcakes and cakes for all of the functions lately, but I wanted to switch it up and make something else fun.  Whoopie pies are great because they are easy for the kids to eat.  I also love that you can still decorate them by rolling the frosted edges in sprinkles.  Of course today I used pink, red, and white sprinkles.  It is also fun to switch up the fillings.  Today I used a classic marshmallow filling made with marshmallow fluff.  They were super yummy and were a hit with all of the kids today.
